Avocado Cheese Crouquette

Ingredients

Avocado (1/2, Mashed)

Boiled potatoes (1-2 mashed)

Mozzarella or cheddar cheese, (half a small bowl,grated)

Cornflour (1tsp)

Salt and pepper

Panko crumbs/ breadcrumbs

Wostershire sauce (optional, contains anchovies)

Garlic (2 cloves, minced)

Chilli flakes or green chilles (optional, for more heat, add as per the taste)

Refined flour (for thick slurry)

METHOD

In a mixing bowl, add half avacodo, boiled potatoes, garlic, salt, pepper, and mix well.

(Do not add too much of avacado, it will make the mixture moist)

Now add a pinch or two of cornflour and 1tbsp wostershire sauce to the mixture and mix well. Add chilli flakes and keep in the refrigerator for 15 minutes.

Prepare a semi-thick refined flour slurry, by adding the flour and little water.

Take a spoonful of mixture, shape it in a form of a crouquette and add grated cheese in the center, make sure to seal it completely to avoid cracks. Now dip it in the slurry paste, and cover it with the panko crumbs and deep fry.

Prepare all the croquettes and enjoy it hot with a hung yogurt garlic dip or ketchup!!!
