Ingredients

  • Refined Oil……………………………………………………………………… 3 Cups
  • Coconut (Grated)………………………………………………………………. 1 Cup
  • Baking Soda……………………………………………………………………. 1 tsp
  • Baking Powder……………………………………………………………… 1 tsp
  • Bananas (Mashed)…………………………………………………………… 4
  • Maple Syrup………………………………………………………………….. 2 tbsp
  • Vegetable Oil…………………………………………………………………. 2 tbsp
  • Dry Fruits (Optional)………………………………………. as per your choice
  • Melted Butter……………………………………………………… to grease the can

Method

  • Set the oven to preheat at 350 degrees before you start with the batter.
  • Take a baking pan and grease it well with unsalted butter.
  • In a separate bowl, add the refined flour, vegetable oil, grated coconut, baking powder, baking soda, mashed bananas and maple syrup. Mix the ingredients well until the batter is smooth.
  • Pour the batter into the pan gently and dab the pan a little to get rid of any air bubbles that might have formed.
  • Bake the batter at 120 degrees Celsius for about an hour. To check the cake, insert a clean knife in the center the cake and declare it done if the knife comes our clean.
  • Allow the cake to rest and cool down for about 30 minutes before you try to dig it out of the backing pan.
  • Transfer the cake on the serving plate and decorate it by sprinkling some assorted dry fruits and some maple syrup on it.
  • Your banana cake is ready to be served.
